Let’s just put it out there now: I love football. I’m a Big Ten fan/Fighting Illini alumna. I’m a Packer fanatic. Monday Night Football is the only thing to watch on Monday night, right? Checking football scores all weekend long is the norm, isn’t it? Football: A pastime that has aligned itself with food. It brings people together, combining food and drink with fun, friendly rivalry, and that feeling of spirited game day jitters.
Game day food changes depending on the sport. Sloppy Joes are definitely a winter sport kind of dish, and our kitchen manager, Dillon, has created a game day treat that will have everyone coming back for more. If you’ve never had Sloppy Joe twice baked potatoes, now is the time, because something amazing happens when you combine potatoes, cheese and scallions with Sloppy Joes (and that means meat, vegetarian, or vegan style!)
RECIPE – SLOPPY JOE TWICE BAKED POTATOES
Bake potatoes in oven,
Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the turkey and 1/4 teaspoon each salt and pepper; cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 5 minutes. Stir in the ketchup, chili sauce, 1/2 cup water, the chili powder and garlic powder; continue cooking until the meat is cooked through, 3 to 5 more minutes.
Split the baked potatoes open lengthwise, dot with the remaining 1 tablespoon butter and gently fluff the flesh with a fork. Top with the turkey mixture and sprinkle with the cheese while still hot.
