As it starts to cool off in our sinfully hot city and we get a change of seasons, I start to think about how the daily meals I eat will change as well. I’ve asked our kitchen manager, Dillon, to provide me with seasonal recipes to share. As we blog along, I will share these amazing dishes with you so that you can prepare chef-inspired dishes right in your home.
Sweet potatoes come to mind as I think about what will now fill my pantry. They’re so versatile, and can be a side dish, main dish, dessert, or even a crunchy snack. What will I choose? This recipe has been known to be breakfast, lunch, and dinner in our house! And today, as I smell the sweet potatoes baking in my oven, there is one thing that comes to mind – whiskey. Yes, good old fashioned whiskey. Sweet, smoky whiskey freed from its cask just waiting to be consumed. Ladies and gentlemen, I bring to you a little celebration of the season. Market-made and now made in your kitchen, Whiskey Glazed Sweet Potatoes.
Whiskey glazed sweet potato
Place the potatoes on a baking sheet and cook the potatoes whole. Bake for 45 minutes to 1 hour. Lightly squeeze the potatoes – if they are soft, they are done. Let cool.
In a small saute pan over high heat, add the pecans and lightly toast. Add 4 tablespoons of butter, reduce the heat to medium, add the agave and spices, and allow to simmer for 4 to 5 minutes. Add the whiskey and continue to simmer for 5 minutes more.
Peel the potatoes and cut into 1/2-inch slices. Butter the bottom and sides of a baking dish. Arrange the sweet potatoes, alternating with the apples. Pour the whiskey-pecan mixture over the top and place in the oven.
Bake for 30 minutes, basting the top with the whiskey sauce once at 15 minutes.
