Would you like a little fresh parmesan on that? May I interest you in freshly grated parmesan? When my server asks these questions, the answer is generally, “Oh, yes. And I may coyly add, “A little extra, please”.
Sweet, nutty, buttery parmesan: The innocent “condiment” that swept me from being vegan. The thought of it just makes me squeal inside. You know you don’t have to go out to eat to have that parmesan experience, right? At The Market we have a lovely selection of parmesan cheeses. Pick up a wedge, and use it fresh atop an entree or broken from the wheel in chunks and served with a nice glass of chilled Apothic Red wine. (Yes, my latest wine obsession – stop in The Market and pick up a bottle).
A parmesan revolution began at my house when we discovered the warm crunchy pieces that melted on the cookie sheet after baking it atop an eggplant slice. Is this a cracker? A garnish? A cookie, even? Call it what you’d like, it’s a delectable bite of parmesan deliciousness. The parmesan crisp.
Our Market Kitchen Manager, Dillon, has taken this crisp a little further, and has added a delightful depth to the already lovely flavor of parmesan cheese. From now through the holidays, this lovely little morsel would be luscious served at a party as a cracker, or as a garnish on a beautiful salad, or just a nibble before dinner. Impress your guests with this simple, mouth watering recipe.
RECIPE – Pecan Parmesan Cheese Crisps
Preheat oven to 400°. Stir together Parmesan cheese and pecans in a small bowl. Spoon cheese mixture by rounded tablespoonfuls 2 inches apart onto parchment paper-lined baking sheets, forming mounds. Flatten each into a 2-inch round, creating an even thickness. Bake 7 to 10 minutes or until golden brown. Transfer to a wire rack, and let cool 15 minutes or until crisp.
